Like a warm milky hug on a chilly winter morning, this porridge keeps us cozy and comforted every time. I love that it has a healthy and untraditional base of black quinoa, we tend to overuse oats for breakfast so it’s good to switch it up. Combined with creamy avocado, crunchy almonds, a light sweetness from honey, and we’re home sweet home.

2 cups water
Pinch of salt
1 cup black (or red) quinoa, rinsed and drained
1 ½ cups almond milk
1 avocado, sliced
¼ cup plus 2 tablespoons sliced almonds, toasted
¼ cup plus 2 tablespoons honey
Bring the water and salt to a boil in a medium saucepan. Stir in the quinoa. Return to a boil. Reduce heat to low and simmer, covered, until water has been absorbed and quinoa is tender but still chewy, about 15 minutes. Remove from heat; let stand 5 minutes, then fluff with a fork. Serve topped with warm milk, avocado, almonds, and honey, dividing evenly.
